  • Spinach and Avocado Omelet

    I like omelets with a creamy filling, and since avocados have been on sale three for a dollar I thought I’d try using avocados.

    I used four medium eggs [affiliate link] for my husband’s omelet, three medium for ES’s omelet and 2 for mine.

    I made each omelet separately, scrambling the eggs for each separately.

    I sauteed 1 pound of fresh spinach for the three omelets. I put a teaspoon or two of butter in a cast iron skillet and sauteed a quarter pound at a time. I salted the spinach lightly with sea salt [affiliate link] while it was cooking down. While the spinach was sauteing I mashed two avocados and lightly salted.

    In a medium sized skillet, heat 1 tablespoon of butter (or other suitable oil; ghee, olive oil or coconut oil [affiliate link]) until bubbling slightly. Pour scrambled eggs into the hot skillet; cover with a lid for 1-2 minutes. The eggs should begin to set up. When they are stiff enough to slide a spatula under, I like to pick up the eggs (hopefully in one piece) and flip them over so the top side can cook quickly. I do not like browned eggs, so I am a pretty fussy omelet maker. My hubby is not so picky, nor is my son, so sometimes their eggs get slightly rowned.

    Once you flip the eggs over, they will be done very quickly, so layer the spinach and avocado in rows in the middle of the eggs. Use the spatula to flip one third of the omelet over the veggies in the middle, and then flip the other side toward the middle.

    If desired, garnish the top of the omelet with some spinach and avocado. Serve with breakfast sausage or almond pancakes.

    Ingredients
    • 9 eggs
    • 1 lb spinach

    What To Do When You Have a Slip

    Okay… get up, dust yourself off and keep going.

    Here are the steps I try to follow when I’ve made a mistake and ate something I shouldn’t have.

    Step 1: Forgive

    First thing you have to do is forgive yourself. I know it’s sometimes hard to do, but if you slipped and ate something that make you feel miserable, you’re already feeling bad enough physically without adding anger and annoyance in the mix.

    Step 2: Inventory

    Take a moment and assess the situation. If you keep a diary or blog, you might want to write down how you’re feeling. Keep this in your mental arsenal for the next time you’re tempted. If you have a headache and can’t stay off the loo because you ate a doughnut and had a cup of coffee [affiliate link] from Starbucks, the next time you’re tempted, remind yourself gently what happened last time. Maybe next time you’ll find it worth the slip, and do the same thing again. But if you do, go back to step 1.

    Step 3: What Happened

    What happened to cause this slip? Remember to be gentle with yourself as you examine the situation.

    • Did you go someplace without bringing a food bag along?
    • Did you bring too little food?
    • Did you let yourself get too hungry?
    • Did you simply get caught off guard?
    • Do you have candida (this can cause strong cravings)?
    • Are you getting plenty of good fats in your diet?
    • Are you getting your broth every day? Broth helps with healing and can help alleviate cravings.

    In the big scheme of things, this is only one tiny blip – it’s not the end of the world! Always be kind and loving to yourself.

    Step 4: Counterattack

    Is there anything you can do now to help yourself feel better?

    • Detox bath?
    • Charcoal?
    • Take a walk?
    • Get some sunshine?
    • Take a nap?
    • Listen to your favorite music?
    • Read your favorite book?
    • Watch your favorite show?

    Step 5: Next Time

    While you are relaxing, make plans now for what you will do the next time. How can you help yourself to avoid this pain and misery you are in right now?

    • Next time you’ll bring food with you.
    • Next time you’ll eat a good healthy meal before you go grocery shopping.

    It might take a few slips to assure that you have established the new method of coping. But remember that each time you slip, this is an opportunity for learning what works for you.

    If you have a spouse and/or children, be sure to verbalize what is going on. It is especially important for our children, that we model good behavior for them. If they see us making a mistake, apologizing for our behavior,  they will naturally be more inclined to do the same when they mess up. Also, share with your family what they can do to help you (or themselves) feel better. If you need quiet in the house because your head is aching, ask them to find a quiet activity while you rest for a while. This is good caretaking for you, and also helps your children learn to take good care of themselves.

  • Monthly Progress Report – January 2010

    Day 43, January 17, 2010: This weekend is the first in a long time that I have not had to take naps! I have been working four days a week for over two years now, so I usually have Friday, Saturday and Sunday off. I have had to take 2 hour naps on two of those days for almost the entire two years. When I started GAPS, I was taking 3-5 hour naps on at least two days. This weekend, I did not feel tired and worn out, and did not need a nap! This is progress which I am very pleased to report!

    Day 34 of full GAPS, January 8, 2010: Okay, this is about my son with Down Syndrome. He is not on full GAPS. We are still slowly weaning him off of “illegal” foods. We have had him off of dairy products and pasta (noodles, macaroni) and have stopped buying deli meats for sandwiches. There is also less and less bread and buns being brought into the house. I had him step on the scale and he is 7 pounds less than he was 10 weeks ago. I have almost as many “issues” with the scale when he stands on it, as I fear his weight will have gone up. Thankfully it has gone down. 7 pounds in 2.5 months is good weight loss. It is better than gaining!

    Also, today my mom and I talked for two hours (at separate times in the day). She has read GAPS Guide and is now starting on GAPS. She is excited! She is stopping eating margarine and is eating tiny amounts of butter! She is amazed that I am losing weight while eating 1/4 to 1/2 cup butter a day.

    Day 33 of full GAPS, January 7, 2010: My hubby asked me to step on the scale as it seems I have lost some weight. I have noticed that my jeans are slipping down further than they used to. The jeans I have been wearing are Just My Size and they are the right size around my waist, but usually they slide down until they ride my hips. Now they are riding down further on my hips. I have also noticed that my wedding ring is sliding around on my finger.

    I do not know how much weight I have lost, as I have “issues” with the number. It is best that I not know, instead gauging my progress by how my clothing fits. I have to continue to remind myself this is not about weight loss (although I would love to lose 75 or so pounds). I consider this a significant change as my weight has been steadily rising for the past 10 years and I was afraid it would never stop.

  • Day 35

    Got to bed around midnight last night. I was on the computer too long and didn’t want to take more time taking a detox bath. I was awake by 6:30am and out of bed.

    I made breakfast for me, hubby and ES. We had omelets with homemade pork sausage. For hubby I scrambled four eggs [affiliate link] in my Magic Bullet [affiliate link], then poured the eggs into a hot cast iron skillet that had plenty of melted butter (about one tablespoon). I typically cook at medium heat (we have an electric stove that goes from Low 2, 3, 4, 5, 6, 7, 8, High so medium is 5) but I am finding with this new way of cooking that 4 is better and sometimes 3. Otherwise I’m burning food. I let the eggs set up at 4 with a lid on top. Before I started the eggs, I sauteed fresh spinach. Hubby has been buying lots of avocados, they are on sale right now 3 for $1.00. So I mashed up two avocados and we had spinach and avocado omelets.

    Since I only had six and a half hours sleep last night, I will probably be taking a nap soon. I need to get the nap done and over with, so I can concentrate on work that I need to get done today.

  • Don’t Use Your Magic Mill to Grind Almonds

    My hubby was thinking we could probably use our Magic Mill to grind almonds [affiliate link]. I told him I thought they would be too “wet” and he said that wheat isn’t totally dried out.

    So I thought I’d give it a whirl today.

    First I grinded the almonds (with skin and everything) in my Magic Bullet.

    Then I put the partially ground almonds into my Magic Mill wheat grinder.

    Well, now I know how to make almond BUTTER [affiliate link]. But of course that’s probably not very good for the mill!! I then put in some wheat to try to clean it out a bit. It didn’t really work too good, but at least it’s not totally clogged up.

    The morale of the story is DON’T DO IT. I found out it is the OILINESS of nuts that is the problem, not the “wetness” as I’d mentioned to my husband.

  • Day 34

    I slept wonderfully last night. I think I got to bed around 9pm and ended up finally getting up at 6:30am.

    I had to work on my husband’s books this morning, which got me feeling stressed out. I had to call the state tax department to clarify how to do some of his taxes. It always stresses me out to talk to them. Not that they are mean or anything, it’s just that I think we’re supposed to do it one way and then I find out I’ve done it wrong and have to recalculate stuff and then try to remember to do it the right way next time.

    ES wanted popcorn this morning to go with his movie from Netflix. He was warming up some butter to go on top of his popcorn but he thought I wouldn’t like him having butter. He was standing in front of the toaster oven, just standing there waiting. I was curious what he was warming, so I said, “Whatcha warming up?” He said, “Uh, sandwich.” I said, “Sandwich? I didn’t know you’d made a sandwich.” Then I opened the toaster oven and said, “Hey, that’s not a sandwich. That’s butter.” He said, “I sorry, Mom.” Then I said, “That’s okay, you can have butter on your popcorn.” He said, “Oh! Thanks, Mom!” and then he was happy.

    The popcorn smelled really good. I caught myself before taking a piece and popping it into my mouth. I surprised myself by catching myself.

    I weighed him this morning, he is seven pounds less than he was the last time I weighed him. I believe keeping dairy and pasta out of the house has helped him to lose some weight. Now we just need to keep slowly removing foods to get him to full GAPS.

    I bought some bananas last night. They were half green. Once they ripen I am going to try this Whipped Banana recipe from GAPSters. Although now that I look at the recipe again, I don’t have a juicer with a homogenizer attachment. We have a juicer that my mom gave us that she never uses. It is some thing with a screen on it. I don’t even know where it’s at.

    Today for breakfast I had the peanut butter [affiliate link]/butternut squash pancake disaster mush stuff from last night. It was pretty good cold. Reminded me a lot of pumpkin [affiliate link] pie filling. Actually I bet it would make a decent pumpkin pie custard replacement. Certainly more protein content with all that nut butter.

    I think I am going to lie down for a while to try to stop feeling stressed out.

    I took a two hour nap, but felt guilty because I wasn’t getting anything accomplished by napping. I have a lot of work to get done this weekend, and napping isn’t going to help me. On the other hand, if I’m tired and feel sluggish, I can’t concentrate and feel no motivation to get the work done. The “work” that has to be done involves one of my side jobs, and I have to prepare year end reports, W2s. For my husband’s business I need to complete state tax information for the month of December. I would like to get this done this weekend, instead of waiting until the “last minute” next weekend. I am desperately in need of finding an accountant who I can consult with for different various issues when it comes to keeping the books, and I need someone familiar with Quickbooks.

    For dinner we had chicken breast cut into chicken nugget-sized squares, dipped in egg and coated with almond flour [affiliate link], and fried in a mixture of coconut oil [affiliate link] and butter. I steamed cauliflower, and I made my husband a small salad with about 1/4 chopped cucumber and a whole avocado. I also gave him a “dip” made of the Avocado Mayo Dressing (a variation).

    I continued to feel somewhat stressed out, and my husband and I were putting together an invoice and misunderstanding one another. I felt really agitated. I think I am having underlying issues with Monday. I have to work at my bosses house on Monday, and she loves to cook for me. Only now I’m on this “diet” and only God knows what she’ll come up with. I asked her on Wednesday if she would be interested in reading the GAPS Guide and she said she would be, so I brought it in to her on Thursday.

    I’ve been a little bit obsessed with my weight today. Thankfully keeping to the full GAPS food list has been so easy that I have no desire to “celebrate” with some kind of food that would cause me to gain weight.

    It will take a while for the “diet head” to settle down. But in the meantime, I’m continuing to eat nourishing foods.

    My water kefir grains arrived in today’s mail! I started them with regular sugar, I’m sure they were pretty hungry from their trip. The lady said she would ship on Monday so they were without anything to eat for five days. My last batch of water kefir grains grew like bunnies, apparently they love our well water. We love our well water, too.

    I am still undecided as to whether my milk kefir grains are alive or dead. The product they are producing smells pretty putrid. It has a smell of kefir, and maybe it is kefir, but I’m not doing dairy, so I’m not going to taste it and I never did like the smell of kefir. The way I am going to tell is to measure the amount of grains and see if they are multiplying. But I probably won’t weigh them until a month has gone by.

    My [easyazon_link identifier="B001ET7EAA" locale="US" tag="gapsdietjourney-20"]Shikai Yuzu Lotion[/easyazon_link] arrived today. Yuzu is Japanese Citrus. I am very pleased with it. It is thick and luxurious feeling. The scent is very mild. I am glad I got four tubes. I am going to take one to work, keep one beside my bed at night, one at my computer at home and that leaves one more tube, maybe to give away as a gift. Or maybe ES would like to have a tube for himself. His hands get really chapped and red during the winter from all the hand washing he has to do as a cook.

    I should really get off this computer and get myself going to bed. I would like to take a detox bath tonight and get into bed at a decent hour. I should be there already!
