    Salmon Cubes

    This is my results of trying the Salmon Dill Burgers from Elana Amsterdam’s cookbook. I halved her recipe to start with, since I was the only one eating. I also didn’t add dill or lemon zest as called for in her recipe. I don’t like those two flavors and I have tried to give them a chance in recipes over the years and end up ruining the food they were put into. So unless I’m making some kind of lemon pie thing, no lemon zest. And dill is for pickles! 🙂

    When the burgers wouldn’t stay together, I just began cooking the food as if it were scrambled eggs [affiliate link] or something similar. They were very tasty, and it was a quick way to make salmon. She recommends to cube the salmon into 1/4″ cubes, now I realize I cut 1/2″ cubes. No wonder they didn’t stick together.

    Salmon Cubes – serves 2

    • 8 ounces salmon, cubed
    • 1/4 cup almond flour [affiliate link]
    • 1 medium egg
    • 1/2 teaspoon sea salt [affiliate link]
    • 1-2 Tablespoons butter

    Scrambled egg. Place all four ingredients into a small bowl. Melt butter in a skillet just below medium heat. Dump the contents of the small bowl into the hot skillet. Allow to sit for a minute or two until browned, then turn over to cook on the other side.

    I think next time I’ll put the salmon into the food processor and grind it a bit to make the cubes smaller, (or maybe just try 1/4″) and maybe I’ll be able to form them into patties.

    I had leftover Faux-tatoes and Butternut Squash Puree. See my butter floating on top of the Faux-tatoes? Mmmmmm!! Delish!

    This was a very delicious meal, and I was actually feeling like I should have stopped about halfway through everything on the plate. The salmon you see in the photo was half the recipe, the other half is in the fridge for leftovers.

  • Day 27 – Happy New Year!

    I feel happy this morning! Not necessarily full of energy, but happy. Maybe it is because it is the New Year! I don’t even know what we are having for dinner tonight, but I hope we will have our bonfire tonight that I have been looking forward to. Good think I don’t really like S’mores all that much! 🙂

    Hubby made soup before I got up at 10am. I had that for breakfast, mostly broth. I was on the computer for a couple hours, then around 1:30 went out to see what dh was up to. Then I remembered I should water my garden. And then to my dismay I saw the gopher had dug several holes all around in my garden bed. This bed had chicken wire laid under it about 3 years ago. When I dug down to see where the hole was at, I discovered the chicken wire is really in a mess down there, all broken in places and rusted out. I hope the rust isn’t bad for the vegetables growing in there!

    I decided to transplant EVERYTHING (which consisted of: lettuce, beets, swiss chard, carrots, cabbage, and spinach) to another bed. A bed that was just underlaid with chicken wire last year, so hopefully the gopher won’t be able to get in the bed and eat the vegetables. I hadn’t meant to go out there and work the garden. I had actually been feeling hungry but couldn’t find or think of anything to make for myself. I worked for about an hour to an hour and a half.

    I harvested some beets, there were three golf ball sized ones, and a few quarter sized. I also harvested spinach, and some swiss chard. I washed those and steamed them to go with dinner.

    Dh ground beef for himself and made fried burgers. I think he went without eating all day. He seemed a little short. When he cooks dinner for himself, he likes to have just meat. He’s usually too hungry to do vegetables, I guess. I suggested that he have some of the sauerkraut with his burgers and he got himself some.

    I’d thawed out some chicken breast. YS cut that up and grilled it.

    So dinner for me tonight was radish sauerkraut, grilled chicken breast, beets, and greens.

    Also, in the little turquoise bowl is a few of the apple and pear slices that I fried up using the recipe I mentioned yesterday.

    I cooked an apple and a pear. YS says he loved the pears and is planning to make more for himself. He also totally LOVES the fermented radishes. He has eaten at least a cup’s worth today.

    Hubby also likes the fermented radishes. I tested the Cortido today, I think it will be done tomorrow. It tasted somewhat sour today, but I think will be better tomorrow.

  • Day 26

    Oh my goodness. Today was quite a challenge. I brought leftovers from last night’s dinner to work with me. The stir fry thing with beef. I actually brought two helpings but ended up eating half of it during the night.

    Well, I didn’t want to take out the time or risk my boss disapproving of my heating up my lunch on the stove, rather than use one of the two microwaves in the building, so I basically went hungry most of the day. Stupid move on my part! I have got to learn to plan better!

    I only had about three hours sleep last night. Something had me messed up. Maybe the bean sprouts? All I know is I could not sleep. When I can’t sleep, and the way I felt, it’s usually because I’m hungry, but my body isn’t putting out the right signals that I’m hungry. Like it’s a blood sugar thing. I got to bed at 9pm and slept until midnight. I’m sure it didn’t help that I napped yesterday due to the stress of the goat and her milk stone and all.

    Anyway, woke at midnight, unable to sleep. I started trying to think of what I could eat if I got up, and finally decided on an avocado after laying there trying to get to sleep for about half an hour. I thought that would do the trick. But my stomach still felt not quite right. Sometimes, when it feels like that… it’s a feeling like I’m still hungry, but I’m not really hungry? Anyway, one thing I’ve learned when my stomach feels like that, if I have a teaspoon of Bragg Apple Cider Vinegar in water, and drink that down, it solves the weird feeling.

    It didn’t work last night. Finally I got up again, I think it must have been 1:30am and decided to warm up some beef broth, and I put some my leftover vegetables (I never did bother to remove the bean sprouts) and also I crushed a clove of garlic in the broth, and put in a tablespoon of butter.

    That seemed to help satisfy my stomach, but I still couldn’t get to sleep. I just laid there, waiting to get to sleep. Or was I asleep, and maybe just not entering REM sleep? At any rate, I do remember around 3:15 finally drifting into a wonderful sleep, only to be rudely awakened at 4am by my alarm.

    For breakfast I had more beef broth (taken from a crock pot roast). YS stopped at Jack in the Box on the way to work, and I was totally okay with that. I have never liked chicken sandwiches from fast food joints. I’m always icked by the fake chicken and the real chicken breast well it might have some fat or gristle.

    I brought almonds [affiliate link] and walnuts [affiliate link], just a handful of each. I had those at my desk, and one Clementine Cutie. I was starting to get stressed out and really grumpy by 10:30. Finally I remember I had brought some strips of beef with me in my leftover stir fry, so I picked those out and felt better for a while. By the time we were getting ready to leave, I was so hungry. I started eating my stir fry veggies cold. Well, they were just a bit colder than room temp and I had put a hunk of butter in with them, and so the butter was of course not melted, but soft enough to squish the whole mess. I was eating out of the bag (no spoon) and getting butter on my chin. ICK. This was on the drive home.

    Oh, and one of my coworkers, a very lovely woman from Guatemala who will soon be taking the test of her citizenship, brought me a Guatemalan tamale. I told her truthfully that I wasn’t eating masa right now. I think she was a little disappointed, and maybe surprised to learn I’m dieting as she has never known me to diet. Her doctor is always putting her on a diet. Then our boss gets into it, helping her with her diet plan. My poor boss, I was talking to her today about some of the foods I’m eating, and how I *am* getting plenty of “good” fats, like butter and coconut oil [affiliate link] and she probably thinks I’m nuts, wondering don’t I know those are saturated fats and clogging up my arteries! I am sure that is what she is thinking. Boy, wait ’til she finds out I’m supposed to be eating liver. She LOVES liver. She’ll love that because she knows how much I hate it. 🙂

    Then YS wanted to stop at the grocery store on the way home. I had a lot of temptation with the foods, that will be another blog post altogether!

    My wonderful husband milked the goats for me, so when we finally got home at 7pm <!!!> I was able to just eat dinner. Hubby cut up a crock pot roast and put it into a skillet in hunks with *hot* green chilies and onions [affiliate link] and garlic. I don’t know but I think he had flour tortillas, he had already eaten dinner earlier. I decided to make my Avocado Mayo dressing, this time with less apple cider vinegar, less oil (we are all out of the cold pressed olive oil that my son got free). I dumped lettuce into a  bowl, dumped a few spoonfuls of the roast, put the dressing on top and half an avocado. It was pretty tasty.

    Also, my radish sauerkraut is done! It has a nice sour/sauerkraut taste to it. The color went from being bright pink on the edges of the radishes to a muted pinkish-orange color. It is definitely done and ready to refrigerate. Hubby tried some, he says it’s delicious.

    Fermented Radishes

    I thought I would pig out on a big bowl of salad but after not even getting halfway through I was done eating. I will put the rest up for leftovers tomorrow.

    Here are before and after pictures of the fermenting veggies. The picture might not be too good. But in the before picture, the sauerkraut is a lime green color, while in the after picture it is more of an olive green color. The radishes have a red and white appearance in the before picture, while the after picture now shows all the radishes are the same pinkish-orange color.

    I put the regular sauerkraut in the fridge last night, and now that the radishes are done, they are also in the fridge. I anticipate it to take one to two more days for the Cortido to be finished.

    Here is a treat I found today that I will be trying tomorrow – Mango Orange Smoothie from The Nourishing Gourmet. Oh my gosh, that looks so divinely delicious.

    I should probably try to focus on having less fruits as the sweetness seems to be bothering my blood sugar, but this sounded and looked so delicious I just have to try it. I bought a mango tonight. Darn it, I had two beautiful mangoes picked out but there were so many people in line, and YS couldn’t find what he was looking for, so we decided to go to another store that is usually cheaper. At the second store, the mangoes weren’t as ripe, and cost a penny more. Well, I’m still going to cut the mango up and freeze it to try this tomorrow as one of my New Year’s Day treats. Oh shoot! I only have ONE banana! Oh well, I guess that’s how the smoothie blends! 😉

    Yep. Some cravings definitely seem to finally be making an appearance. Wow, and I thought it was going to be easy.

  • Monthly Progress Report – December 2009

    I thought it would be handy to have a monthly report to look back on where I will list the most significant changes that have happened during the month. This report will become present in the current month once a significant change occurs.

    Day 13 of full GAPS, December 18th, 2009:  Today I noted in my daily report that my feet were no longer hurting, and that I am now able to sleep for up to nine hours.

    I Eat Just Like a Goat

    I have come to the realization over the past few years, since we’ve had goats, that I eat like a goat. Now first you must understand that goats do not eat everything, as is commonly believed. In fact, goats are very picky about what they eat. Instead, the reason why you see goats with things in their mouths like tin cans, etc., is because they are very curious. Now granted, they do like eating cardboard, because their natural diet is dry and fibrous. Goats are also browsers, not grazers. They love to reach up and eat leaves and branches from trees. They are more like deer (browsers) than cattle (grazers). So when people buy goats to keep their lawn mowed, they will do it, but it’s not their favorite food.

    Anyway, back to me and how I eat like a goat. Well, the thing is, when goats eat, they don’t take a small bite and chew and chew and chew on it. That comes much later. When they have brought up their food from their rumen and are chewing it as cud.

    People are supposed to take small bites and chew and chew and chew the food, since digestion begins its process in the mouth with saliva.

    When I eat pasta, my favorite way to eat it is get a huge amount on a spoon or wound around a fork, put it into my mouth, chew it two or three times, and swallow it whole. I do not know why. But this is how goats eat their hay or grain. They literally swallow everything whole. Until later.

    But the problem with me doing that, is I don’t hawk up my food later and rechew it.

    I am finding with the foods I am eating now, I am less apt to swallow my food whole. Thereby being less goat-like. This I consider a success. It is coming naturally, also. I do not have to think much about it. I wonder if the bacteria in my intestines preferred the food whole. Could it be that my body knew I would feel better by swallowing my food nearly whole?

    That’s my little gem for the day. I thought you’d want to know.

  • Day 25

    I had a horrible night. I am tense with worry over my milker and the stone in her teat. I should have gotten up and taken some kava kava, but I didn’t. I finally managed to relax my shoulders and neck so I could sleep. After midnight. Then I was up at 4am. No feeling of hunger, but I know when I wake up this early, it’s hunger. I realized I haven’t been having my daily broth! I pulled out a frozen cup and sauteed some mushrooms. Very delicious.

    I’m going to have to go back to bed soon. It’s 6am and my husband just got up. I will have to tackle the stone in the teat by myself, later on this morning as he has work scheduled for today.

    I just feel horrible for my milker.

    I think I ate too many cherries last night and messed up my blood sugar levels. I have been avoiding fruit pretty strictly. I will need to remember this. It seemed to cause cravings last night.

    I finally got up again at around 10am. My mom had called me, wondering where we get our beef bones – to make stock! I told her we have mostly been focusing on chicken stock.

    12:18pm. Thanks be to Jesus! I finally got the milk stone to come out! I was so nervous and upset that I was literally shaking physically. I made sure to have something to eat before I went out, I had leftovers: two carrots, a bit of cauliflower, about half cup of green peas and about an ounce of roast beef.

    I used the crochet hook again, and poor girl, I was trying to see if I could get hold of thing somehow. Since it is a little piece of calcium, it’s sharp and I was cutting the inside of her teat so she was bleeding a bit. I started crying, I hate causing them pain. She was so good though, just kept standing still for me. She was headlocked into the stanchion on the milking stand. I tried again to squeeze the thing out by sheer force, nothing. Finally I thought maybe we’d have to just resort to what my husband and I had discussed earlier… just let her dry up. I am loathe to force dry my girls, if they are continuous milkers, I want to foster that. I’d rather milk my girls, every single day and get a quart or half gallon, than to have to worry about what to do with the kids, year after year.

    Anyway, finally I decided to get into my normal milking position (the affected teat was of course farthest from me so I had to work from the opposite side). I sat down and took hold of her teats and began to milk. And two squeezes later, the tiny little thing popped out! I almost shrieked with joy. I stood up and danced around, panting and laughing. I had brought my cell phone out. I found the stone in the milk bucket and took it out. I sat down and milked her once more, to make sure I wasn’t imagining anything, and her teat is free and clear! I called my husband and gave him the wonderful news. He was relieved.

    I feel so much better, but drained.

    Here is a photo of the stone with a gold safety pen, a cherry pit and a penny for representation of size. If you know what hulled birdseed (millet) looks like, that is the size of the stone. Hardly enough to cause all this stress and commotion!! Click on the photo to see a much larger version.

    Milk Stone

    I had to lay down and take a nap after all the excitement and emotional stress. I slept a couple of hours and got up by 5pm. Hubby had arrived home so we went out to milk. Such a relief that my girl is okay and I can get her milked out!

    Dinner was stir fry.

    OOPS! Accidental breach. I didn’t consider bean sprouts would be on the non-approved list. Okay, pretend there are no bean sprouts on the plate and it will be full GAPS. I “riced” cauliflower so it would look like we were getting to have rice, which we always would have with stir fry. I sliced the meat thin, sauteed it in butter which made a delicious sauce to pour over the veggies. The veggies were onion, carrots, bell pepper, cabbage, mushrooms and the NON-approved bean sprouts. No soy sauce. Hubby asked what about soy sauce, I said I guess you get to use sea salt [affiliate link]. 😉

    Stir Fry

    The top sirloin that hubby brought home had a LOT of fat on it. We aren’t very good at eating that kind of fat, so usually I would trim the meat and the dogs would get an extra special treat (we feed RAW anyway but the don’t usually get top sirloin). I took what was left over, ground it in our Kitchenaid and put the ingredients into it to make Italian sausage. It has to sit 2-3 days in the fridge in an airtight container so the flavors can marry.

    In spite of the stress of the day, I still had the energy to make sausage, which isn’t the simplest thing to do. I was on my feet a lot in the kitchen, and it is just so fantastic that my feet don’t hurt!

    Tomorrow’s update may be late. I made extra dinner so I can take it for lunch at work tomorrow. I need to get to bed because I have to get up at 4am. OH, the sauerkraut was done today and I put it into the fridge. I also started some pineapple vinegar.
