  • Red Pepper and Cabbage Ground Beef Stroganoff (No Noodles!)

    Red Bell Pepper and Cabbage StroganoffI just love the colorful presentation of vegetables in this dish, I’ve made it twice so far. I would say this amount would serve four light eaters, but if you are hefty eaters, maybe only two.

    I loved this dish with cayenne, I put in 1/4 teaspoon. If you don’t like “hot” don’t use the cayenne, and please test with a light sprinkle first if you do want to try it.

    I thought this dish was similar to noodle casserole dishes I’ve made in years past. The wide cut cabbage reminded me of egg noodles. I know cabbage isn’t noodles, but I sometimes miss having the mouth feel of wide egg noodles, so this was a nice substitute.

    It is quite delicious and I believe you’ll agree.

    Red Pepper and Cabbage Stroganoff

    1 pound of zucchini squash
    2 T. butter, ghee or coconut oil [affiliate link]
    1/2 cup chopped onion
    1 large red bell pepper, chopped into 1/2″ to 3/4″ pieces
    1 pound of hamburger
    4 cloves [affiliate link] of garlic, chopped or minced
    1 pound of cabbage sliced into 1″ thick wedges
    1/4 teaspoon cayenne, optional

    Quarter the zucchini squash length-wise, then slice about 1/4″ thick. Place a steamer into a pan large enough to hold the squash. Put water in the bottom and put the zucchini into the steamer. Allow to steam until fork tender (mine took 20 minutes).

    Melt the butter, ghee or coconut oil in a pan. Add the chopped onion and red bell pepper. Saute until onion begins to turn transparent, about five minutes. Add the hamburger and cook until it is no longer pink. Add the garlic, and the pound of cabbage. Pour in 1/2 cup of water, cover and cook for twenty minutes.

    When the vegetables are all transparent or fork tender, mix together in a bowl.

    I loved this dish with cayenne, I put in ¼ teaspoon, but I think my cayenne is a little old because it doesn’t taste very hot lately. If you don’t like “hot” don’t use the cayenne, and please test with a light sprinkle first if you do want to try it.

  • Day 59

    I am very tired this evening. This is because I went to bed at 9pm last night, which is late for having to get up at 4am. That wouldn’t have been so bad, except I woke up at 1:30am and couldn’t get back to sleep.

    I finally got out of bed at 4:15am in a very foul mood. I snapped at my husband complaining about the television being on all night long. I know that sleep patterns are disturbed when you don’t sleep in the dark. I even cried this morning as I took my shower, getting ready for work.

    It reminded me that I used to be in a sorry mood much of the time, prior to starting GAPS. I used to mutter to myself, “I hate my life, I hate my life.”

    I haven’t been feeling that way, which I take as improvement and success.

    Another thing is before GAPS when I didn’t get enough sleep, I would have had to drink four ounces of coffee [affiliate link] (more than four ounces would make me shaky). On GAPS, I am tired, but I can tolerate the tiredness.

    Also, yesterday I worked on closing the previous month’s books and I was able to think clearly about what I was doing whereas in past months I have felt befuddled. It could just be that I am finally learning what I’m supposed to be doing, but it seems like the brain fog has lifted significantly.

    Let’s see, I had my broth this morning. I left two cups heating and reduced it down to one cup accidentally. Thankfully it doesn’t seem like I am sensitive to freed glutamates from broth. I brought leftovers with me for lunch; half of a grilled chicken breast, about 20 pieces of asparagus, an avocado, leftover salad, about 15 grapes and about 20 almonds [affiliate link].

    Hubby baked a chicken so I ate off of that when I got home. The skin had cooked until it was crispy, so I ate about a six inch square of that. I thought that was all I wanted for dinner, but now it seems like I’m feeling hungry again. But now I’m hungry for some vegetables. Except I was planning to take my detox bath which I missed last night. And I need to get to bed early tonight so I can have a successful day tomorrow.

    Tomorrow is Day 60.

    I forgot to mention on Saturday I decided to have a little bit of honey [affiliate link] on my pancakes. I mixed about 1/4 cup of butter with about a tablespoon of honey and dipped my pancake in that. Ohhhhh… nectar of the Gods. Sooooo delicious. So divine. I don’t quite remember loving honey quite so much.

  • Day 58

    Ohhhhhh… the weekend went by so quickly. I got a lot done though! I am accustomed to pacing myself over the past few years, because I know I will only have energy for so long and then it’s over. So there’s no point in wiping myself out when I can only do so much.

    I caught a few minutes of a cleaning show on satellite television today – How Clean Is Your House? I saw houses that were actually dirtier than mine! Amazing. Mine’s pretty cluttery and dirty, but not that bad. Yeesh! The one I saw today was a young couple that had three young rescue dogs and something like 8 chinchillas. I don’t know if the dogs were housebroken… and the house seemed to be covered in brown grime. I wonder if they are smokers?

    Anyway, my point in bringing this show up is… what was my point? OH, yes, my point. They brought in a team of at least ten people to clean this young couple’s home. I knew that was why it takes me forever to get our home cleaned up.

    See, I have no energy so I can’t do much of anything. My husband washes dishes, and my youngest son will wash dishes, too. But neither one of them pays any notice to the stove caking up with food and grime, and the floor, I don’t know if they’ve ever swept or vaccuumed. Okay, maybe two or three times each?

    And none of us care all that much and we live way out in the boonies so no one ever comes over to visit. But heaven help us when someone does want to come visit. It’s a nightmare. I once had a family come by to visit, they told me like the day before, “Oh, we’d like to come meet the goats and see where the milk comes from” and I was like, “Make sure you use the bathroom before you get here, you really can’t come in the house.” And they didn’t listen to me, and I couldn’t let them come in.

    OH dear. I never started this to be a true confessions about my messy house.

    The other thing I was rambling about is I get these spurts of energy, just long enough to make a tiny dent. Then throughout the week, the house gets messy again. And on the weekend, I have no energy. So the little dent I made becomes unrecognizable.

    I am hoping that this weekend was not my typical “burst of energy” I hope it is the start of a new existence for me, one where I actually have energy and can get the house cleaned up and do all the things I need and want to get done!

    I was also feeling a bit down today. I guess I got my hopes up a bit too much that I will lose weight being on full GAPS. My pants felt really tight on Friday night when my hubby and I went out to do a bit of shopping. They are the ones I’ve been wearing to work and they were just uncomfortably tight. So that can only mean one thing. I’m gaining weight again. Or maybe not.

    I have to keep reminding myself this is about my health, not about losing weight. Although losing weight and getting to a normal size would certainly be the icing on the GAPS cake for me.

    And now it’s after 8pm and I have to get up at 4am tomorrow morning, so as much as I’d like to drone on some more, I had better stop for now. I never did get back to Day 56 – Evening. That’s something else, since I’m on GAPS, suddenly I’m on cooking detail all the time. Okay, that’s a slight exaggeration. I guess it just seems like I’m cooking 5 or more nights each week, and I used to only have to cook 2-3 nights. It takes a lot of time to prepare meals.

  • Day 56 – Morning

    I have been missing in action with daily reports for the past week. It has been a very tiring week. I had to meet with our lawyer in order to gather some legal paperwork, and although it was much less stressful because she was able to go through the files and figure out what was what, I still ended up getting nervous and stressed.

    When we have stress and are adrenals are fatigued, it makes life harder.

    One of my sisters called to ask me about GAPS. She asked me how it was working for me, and she called me again yesterday to ask me about some specific foods that she eats and if they were allowed. I believe all of my siblings have gut dysbiosis to some extent, and all could be helped with following GAPS.

    I only say that because I didn’t think I needed GAPS, until I read the books, and since families often have similar issues it follows that if my mother and my father have gut dybsiosis, then my siblings will as well.

    Yesterday my blog was up and down, up and down. I managed to get a few things done before the problem started. I put up a new header, which I’m very happy with, changed the positioning somewhat, and I have monetized my site. You’ll recognize the familiar Google Adsense ads. I don’t have control over what Google decides to add to the site, and please know that I don’t endorse every ad. I noticed the first few ads that came through were about ranching. 🙂  While this blog is on a “ranch” website, there won’t be a lot about ranching.

    I do have a ranch blog, but I am not doing updates very often. I am sure something will come up every now and then that will prompt me to write something. I think what’s there contains a lot of good information. Maybe as I begin to feel better I will feel more like adding to it. For now it’s pretty much a blog about goats, oh and there is a series on the cute cottontail bunnies we raised a few years ago.

    I’ve continued to stay off my asthma medication, Flovent, which is a corticosteroid. I am having to use Albuterol at least once in a 24 hour period. One of the things I am trying to do is drink more water. 8 ounces or less isn’t enough.

    Since my blog was down for most of the day yesterday, I had other things I could have done on the computer, but instead made myself get up and do some housework, which I actually felt that I had energy to do. I cleaned out several cupboards which had foods in there that were old, that no one was going to eat and there was a colony of weevils set up in one cupboard. So the kitchen is pretty good now. Unfortunately my counters are formica and some people around here don’t realize you can’t set a hot cast iron skillet on it without some repercussions. Like ugly boils and burns. So much fun taking food photos in my kitchen. NOT.

    Today I’m going to be working on our finances again (tax day looms ever near) and I’m cleaning ES room. We have his blankets in the washer right now and I’m going to make scrambled eggs [affiliate link], hamburger patties (seasoned to taste like sausage) and maybe pancakes.

    Faux-tatoes, My New Favorite Comfort Food (Simply Delicious Pureed Cauliflower)

    These are so simple and delicious. I’m sorry that I rejected the idea of faux-tatoes years ago. There was a young man at my job and he and his wife were doing the Atkins Diet. He told me about how good the faux-tatoes were, but I couldn’t believe it. I thought to myself how I would NEVER give up mashed potatoes.

    And now here we are in TWENTY-TEN. How things change.

    Now that I am not eating potatoes, whipped cauliflower has become my new favorite comfort food.

    Here’s how to make it.

    2 small heads of cauliflower, broken into small pieces

    Steam until tender. It is best to use a steamer basket so that the cauliflower is not resting in the water while it cooks. It takes 15-20 minutes until the cauliflower is fork tender. Pour the cauliflower into a colander to drain any water.

    Put the cauliflower back into the pan and add in some butter or ghee, or your favorite healthy fat. Add salt and pepper and hit with a stick blender. The more you blend, the fluffier the cauliflower will get.

  • My GAPS Journey Update Day 51

    Day 51 update on my GAPS Diet Journey

    I talked with a friend about GAPS. She said she wasn’t ready to do anything like GAPS but she did ask what goes into “prep” and how many times a day do I eat. I told her about my feet and back, how they’ve stopped hurting. She asked me if I thought my feet and back stopping hurting due to losing weight? I don’t think losing weight could have played a part in only 13 days. It’s more likely that I removed foods that cause inflammation.

    Today I made a loaf of sandwich bread from Elana Amsterdam’s The Gluten-Free Almond Flour Cookbook today. I had to tweak the recipe a bit. It called for arrowroot powder, which is not GAPS legal. It turned out okay, and was actually it was pretty good. I think I was expecting a taller loaf, but I did have to tweak it some so maybe that is why it is shorter than I anticipated.

    I managed to drink six glasses of water today. I drank two cups at a time each time. I didn’t have to use my Albuterol last night – I felt like I was not breathing as well as I could be, but no wheezing. I didn’t have to use it today either. I drank four glasses of water yesterday.

    I guess I am going to just use my Albuterol as needed, and not worry about it too much. One of my goals from doing GAPS is to heal my asthma.

    I’m pretty tired tonight. I wish I would see some improvement in my energy levels. I’m feeling a little weary.

    I’m not having to take a nap every single day that I don’t have to go to my regular job, so that is a positive.

    I also made meatballs to go with the spiralized zucchini and the loaf of bread. The meatballs were fabulous, and I will definitely make them again.

    Today was a good day, looking forward to tomorrow!
