  • Day 98 Intro Day 10 – Day 5 of Stage 4

    So tired tonight. Only got six hours of sleep last night. Had to go places today… went to my sister’s… it always surprises me how far our philosophies are from each other when we used to be so close. For example, I’m pretty sure she did not use a microwave at one point in time… but she does now. I didn’t have one for years, but then backslid and used one, but now we don’t have one. She is very heavily into not eating any animals fats, she told me she trims the fat from the chicken breast and buys the leanest hamburger that she can.

    Anyway… we are on polar opposites when it comes to nutrition, it seems. I guess my sister has my niece on some 3 hour diet. She had a book in her bathroom on it, and apparently you get to eat whatever you want, you just make sure you eat every three hours. I did that for years, and all it got me was weight gain. Maybe since my sister has my niece on a low fat diet is causing the weight loss that she is experiencing. But I believe that a low fat diet is very detrimental to our bodies. I ate half of my cabbage and hamburger that I’d brought with me while at my sister’s house. Her first grand baby is very cute. I also brought butternut squash and peanut butter [affiliate link] pancakes with me, and finished those off before the wedding.

    The wedding was nice. Funny how they are never as special as your own. The reception was to begin at 2pm at a location about 30 minutes away from where the wedding was performed, but the bride and groom did not arrive until 3:15pm. I left right about 3:30pm when they were starting to eat. I saw that they had some fresh vegetables, but I’m not that far in intro, and I was sure the rest of the food wouldn’t be allowed.

    I had planned to then go to my friend’s house to take photos of her belly, but she canceled. It was just as well as I was very tired by that point.

    Dinner was chicken legs baked in the oven, slathered with coconut oil [affiliate link] and parsley [affiliate link] flakes and celery salt. I think the celery salt is not allowed on GAPS, and may have been a breach, but I was too tired to think about it and my son made dinner, which was a blessing. I steamed some asparagus and had coconut oil on that. I was careful to take my HCI with Betain today when I ate. I took two tablets each time. I guess tomorrow I will try three tablets.

    Now it is 9:15pm and I must get into bed.

  • Day 97 Intro Day 9 – Day 4 of Stage 4

    Just today I realized that I’m barely doing Stage 4. Because I have only incorporated the roasted or baked foods, I haven’t done the olive oil or the carrot juice, or the nut bread, or anything else! Drat! I should have made some nut bread today. Maybe I will do that in the morning.

    You’ll never guess what I did this morning, so I’ll just tell you.

    I cleaned the chicken pen and also put hay in the nesting boxes.

    Do you have any idea how huge this is? I RARELY have enough energy to even contemplate such a feat, let alone follow through with it.

    My husband has been getting really busy with his business, so he has been letting a few chores slide. Like gathering the eggs [affiliate link]. Now granted it’s cold enough outside now that the eggs can be outside for a few days. After all I know some people don’t ever want their eggs chilled, or washed for that matter. My husband also doesn’t keep up with keeping the nesting boxes filled with hay. It causes a cascading effect to occur… the hens don’t find the nesting boxes attractive, so they go looking in the coop for someplace else to lay their eggs. So we end up having eggs all over, instead of just in the nesting boxes! Not to mention without hay in the nesting boxes, for some reason the girls seem to make the eggs filthy. So then I am faced with the dilemma of washing the eggs, or leaving poop on them… hmm…

    Anyway, in addition to that feat (I didn’t do a perfect job, but I did take out two wheelbarrows of feed bags, old broken plastic buckets, etc.), I also managed, with the help of my youngest son, to clean up my desk area. I swear the cords had married and had offspring there were so many. And the dust. Oh dear, the dust.

    I’m trying to remember what I ate today. I made butternut squash and peanut butter [affiliate link] pancakes and had a couple for breakfast. I remember eating an avocado at some point in the day… dinner was cooked cabbage with hamburger, green bell pepper, onion and a couple of roasted green chili peppers (diced). Very tasty, and enough left over that I can take some with me tomorrow. I have to bring food with me for the entire day!!

    I never hold my breath when I get a burst of energy because it rarely lasts more than a day. I did get nine hours of sleep last night, and after the hard work today I laid down and took a nap from 2 to 4pm.

    I started a new batch of cortido, and my regular sauerkraut is done and in the fridge. Delicious! My milk kefir grains are making kefir much faster, but they still don’t seem to be multiplying very rapidly. On Dom’s kefir site I learned that he makes his water kefir grains grow faster by adding a slice of ginger [affiliate link]. I tried that, and the kefir water does taste better, but the grains don’t seem to have grown at all.

    I got some new water kefir grains (dried) in the mail today, I must remember to send the lady who sent them some PayPal money.

    I have been taking one tablet of HCI every time I eat, started that on Wednesday evening. No burning or anything, so tonight I decided to go to two tablets. My husband tried three tonight.

    I want to do a little more research on the HCI but I found this site Oral Chelation that says HCI is a remedy for:

    • High homocysteine level (cause for severe coronary disease)

    • Asthma
    • Gallstones
    • Indigestion and heartburn
    • Rheumatoid arthritis
    • Thyroid conditions
    • Tic douloureux

    Pretty impressive list.

    When I say I want to do a little more research, I mean like am I really supposed to take two tablets every single time I eat? What if it’s only broth? What if I only eat, say a banana?

    Today was a pretty good day. Tomorrow is going to be very busy. I should get to bed so I can get up at a relatively decent hour and get going.

  • Day 96 Intro Day 8 – Day 3 of Stage 4

    I have planned to abstain from butter for six weeks. Today is Day 7 having no butter. My son cooks at our job and today he made Thanksgiving in March for the clients. He made chicken breast, corn, spinach, rolls (with margarine pats), stuffing and pumpkin [affiliate link] pie. The spinach looked delicious, and my son said it came in fresh and he’d blanched and frozen it. I asked him what was on it, because he usually uses margarine (our boss prefers margarine and of course it’s cheaper), and he said, “Only butter.” Woot! I said I’d love to have some and he said I should get myself a bowl so I did, brought it back and he gave me about a cup’s worth. That quickly I totally forgot I was abstaining from butter. But I remembered, and I put it back before eating any of it.

    For breakfast I had the beef stock I mentioned last night from the crockpot roast from last night’s dinner. About 9:30am I had some butternut squash with coconut oil [affiliate link]. Lunch was roast beef with onion gravy, broccoli and faux-tatoes. I was late getting home from work, very late. After work I ate an avocado which helped me to last through to when we got home.

    For dinner I warmed leftover roast, and cooked some zucchini squash, but then I ended up having two eggs [affiliate link] scrambled with avocado cooked in coconut oil. I had some sauerkraut. My newest batch of sauerkraut turned a little brown on top, I hope it’s going to be okay.

    I have been taking the Hydrochloride with Betaine with each meal. Today at work, it felt like my stomach might have been a little bit upset. I haven’t been taking the HCI with my broth in the morning. Just with other meals.

    Tomorrow I get to stay home, but the next day I will be away from home so I need to make tomorrow count with regards to planning my meals.

    I put my GAPS Guide into my lunch box at work, and I had a baggie with broth in there that leaked (yesterday)… so my GAPS Guide got a little waterlogged. I think it is going to be okay. It is still a little damp in between the pages. I need to figure out when to start Stage 4. As I said yesterday, it has just been easier to stay here.

    I also need to cook some more stock! I am still not feeling the energy, but last night I was actually thinking about making myself a chore list. Typically when I start feeling like doing something, I have more energy.

    I also have to learn more about the HCI. I think I should try taking 2 tablets. I was going to do that tonight, but I totally forgot.

    I’m very tired, I didn’t get my detox bath last night. I really would like to take one tonight, but I am so very tired.

  • Day 95 Intro Day 7 – Day 2 of Stage 4

    I suppose I could have moved on today, but it is just too hectic. At work we got a new server and it is so doggone frustrating because our IT people have no human feelings it seems sometimes. They just do things without much consideration. And it makes us all grumpy and today I threatened to be gone, dead or retire by the next time they change the stupid servers, which hopefully gives me about 2 or 3 years to get out of there. I even told my boss we need to hurry and get ready to do that. LOL.

    Anyway… I started taking the HCI with last night’s meal. I only took one, no burning or stomachache.

    I had broth for breakfast this morning, an avocado at break. Lunch was chicken breast and an avocado. Dinner was roast that hubby put in the crockpot with faux-tatoes and onion gravy. Lovely meal. Just delicious.

    I got home late from work and after I cooked dinner my husband needed me to put together several invoices, so that took up any free blogging time I might have had. But of course his business comes first because it’s bringing in more money than blogging. 🙂

    Oh, I was going to say I meant to take 2 of the HCI tonight, but I think I’ll just wait until tomorrow night’s supper to try taking two.

    I was thinking tonight, I think I have had more energy, if for the simple fact that I’ve been cooking dinner at least 5 nights a week. I wasn’t cooking dinner for the longest time. So I guess I am feeling a little more energy with this here GAPS diet.

    I’m all out of chicken broth!! I am going to sub with the roast beef broth from the crockpot roasts.

  • Day 94 Intro Day 6 – Day 1 of Stage 4

    Breakfast on the way to work was chicken broth. I brought leftover chicken breast with me for lunch, and stopped at a store on the way to work and bought six small avocados (6/$1). I had one avocado around 10:30 for a snack.

    Lunch was chicken breast with some chipotle sauce that had no illegal ingredients, and I also had two avocados to go along with the chicken.

    Dinner was a few bites of pork, and I made nut butter pancakes! They were great! I took this recipe and modified it slightly: Grain-Free Foodies Light and Fluffy Intro Diet Pancakes with Lemon Honey Syrup. Basically I just took 1 cup of butternut squash, 1 cup of peanut butter [affiliate link] (oh dear is peanut butter allowed? It had ONLY peanuts and salt), sea salt [affiliate link] and two eggs [affiliate link]. I just mixed those all together with a whisk (didn’t puree the squash or separate the eggs) and these cooked up great for me in a cast iron skillet, cooked in coconut oil [affiliate link].

    I forgot my GAPS Guide at work in my lunchbox. I had chicken left over and three more avocados.

    I do remember the GAPS Guide saying to only eat one pancake. Oops. I ate two. Small ones.

    I also started taking the HCL. I took one tablet with my meal. I have not had any stomach burning sensation or anything different. Maybe I burped once or twice.

    I am very tired tonight. I only got 6.5 hours sleep last night due to waking up at 2:30am VERY hungry.

  • Day 93 Intro Day 5 – Day 1 of Stage 3

    I forgot to post yesterday, so here is a rundown:

    Stage 3 meant I got to have avocado! I had two scrambled eggs [affiliate link] for breakfast with an avocado mixed in. OH my goodness. Delicious!!!

    Throughout most of the day I was sneezing and my nose was running. I was starting to think I was getting a cold.

    I can’t remember all I had to eat during the day… but dinner was chicken breast and some vegetable. Boy, my brain is failing, I can’t even remember yesterday.
