    Curried Pork over Cauli-Rice with Vegetables

    Curried Pork over Cauli-Rice

    Curry has become one of my most favorite spice mixtures. I’ve been using a homemade version from my friend Jessica, from Delicious Obsessions. I’ll link to her recipe below. Consider making a double batch of the sauce (coconut milk [affiliate link], almond butter [affiliate link], curry powder) it is very delicious tasting, very thick and creamy.

    • 1 head cauliflower, riced
    • 1 red bell pepper
    • 2 small zucchini squash
    • 2 large carrots
    • 6 green onions [affiliate link]
    • 4 Tablespoons butter or bacon grease
    • 1 pound pork cut into small cubes
    • 1 cup coconut milk
    • 2 Tablespoons curry powder (see which curry powder I use below)
    • 1/2 teaspoon sea salt [affiliate link]
    • 2 Tablespoons almond butter

    Rinse cauliflower. Break into small pieces and pulse in the food processor until pieces are small like rice. Place in a pan with 1 inch of water or broth at the bottom.

    Cover with a lid and bring to a boil over medium heat (you’ll know this because steam will be forced out of the pan).

    Once the pan has come to a boil, remove from heat and allow to sit with the lid on.

    After about 5 minutes, place cauliflower into a mesh strainer to remove liquid. If you are using broth, you may use the leftover broth to cook the vegetables.

    Slice zucchini squash into 1/4″ rounds.

    Slice carrots into 1/4″ rounds.

    Chop green onions into 1″ long pieces.

    Slice red bell pepper into thin long strips.

    Place zucchini, carrots, green onions and red bell pepper into the pan you cooked the cauliflower in with the broth, or 1 inch of water at the bottom. Place a lid on the pan and bring to a boil over medium heat. Reduce heat and allow to boil gently for 20 minutes.

    Cut the pork into small cubes. Melt 4 Tablespoons butter or bacon grease in a skillet. Place the pork in the skillet and fry on medium heat until browned on one side, about 10 minutes. Turn over and continue cooking until done on the other side, about 10 more minutes.

    Add 1 cup coconut milk, 2 Tablespoons curry powder, 1/2 teaspoon sea salt, and 2 Tablespoons almond butter into the pan with the pork. Mix together thoroughly. Simmer for 2 to 3 minutes until mixture becomes thick like gravy.

    Place Cauli-Rice on a plate, dress with vegetables and finally spoon curried pork over the top.

    Serves 2 to 3, depending on how hungry you are.

    This is my favorite curry powder – it is a homemade recipe by my friend Jessica from Delicious Obsessions. By the way, for the “parts” I just substituted Tablespoons. For the 1/2 part cardamom I used 1 teaspoon and 1/2 teaspoon.

  • Day 7 Last Day HealThy Mouth World Summit Preview

    Today I listened to the three speakers and learned quite a bit. I’ve been posting some of the things that were interesting to me on my Facebook page. I really like Dr. Cate Shanahan, she shared her scientific based argument against flossing. Basically she was saying that you could be moving bacteria from one area of your mouth to another and stressed that you should not ram down the floss, and should use a different area for each tooth area. Dr. Mike Godfrey talked about the connection between cancer (particularly breast cancer) and oral health. Dr. Paul Rubin’s talk was entitled “Is Your Dentist Mercury Safe”. I feel good knowing that the holistic dentist I’ve chosen seems to meet the criteria.

    Listening to all this makes me very grateful that my children do not have amalgam fillings. My youngest son has only had one cavity and as a young child he was insistent on not having “that ugly silver stuff” in his mouth. Thank goodness as his cheapskate mother would have just had him get an amalgam had he not fussed so over it. My oldest has not had cavities.

  • Day 6 HealThy Mouth Summit Preview

    The HealThy Mouth Summit is live. The new session begins at midnight each night. Tomorrow (Friday January 18th) is Day 6. Each day’s speakers can be listened to one day only, I missed the first 5 days so I am considering the upgrade. Sometimes having a “real” job can really cut into the things I want to do. My friend Patty from Loving Our Guts told me about the upcoming HealThy Mouth Summit (nice play on words there “Healthy” and “Heal Thy”) and I looked into it and signed up but wasn’t really able to pay attention to the sessions. Tomorrow is my day off so I will be watching and listening throughout the day.

    I have talked before here at the blog about my amalgams. I really want to get them out and I’m very lucky to have found a holistic dentist. This summit going to share some information which I think I will find very helpful in deciding how to proceed with having my amalgams removed. It is confusing trying to figure out what to do.

    Here is a summary of the speakers for Day 6 (Friday January 18th). I’m especially interested in hearing Dr. Cate Shanahan’s science based argument against flossing!

    And Dr. Mike Godfrey is going to share alternatives to mammograms. One of my younger sisters recently told me she really wished I would get mammograms. I had one set and then I decided I wasn’t going to do that to myself. It worries my sister since our maternal grandmother lost a breast to cancer in the 50s.

    Dr. Paul Rubin is going to share how to safely remove mercury fillings. The “regular” dentist I’ve seen for years does not believe there is any problem with mercury fillings and takes no precautions whatsoever in removing them for anyone: not himself, the patient, his staff, the office is wide open and I would think even patients in the waiting room are exposed.

    Back when I first started on GAPS, chocolate was not legal. I decided to cheat in June 2010 to make a cake for my husband for Father’s Day and modified this recipe from Elana’s Pantry’s The Gluten-Free Almond Flour Cookbook. the cake was amazing and delicious, and Elana’s is one of my favorite cookbooks! Because it was not legal to have chocolate at that time, I asked Shirley from Gluten Free Easily if she would host my cake recipe and it has been there ever since. Shirley recently started a new site called All Gluten Free Desserts… All the Time and asked if she could include this recipe there. I thought that would be pretty cool. Shirley asked me if I would like to “bring my recipe” home since it’s been a couple years, and since GAPS now allows chocolate and baking soda [affiliate link] when baking, I thought that was a great idea too. Thanks, Shirley!

    Polka Dot Chocolate Cake with Chocolate Almond Butter [affiliate link] Frosting

    Chocolate Cake:

    • 2 cups and 1 Tablespoon blanched almond flour [affiliate link]
    • 1/2 cup cocoa powder [affiliate link]
    • 1/2 teaspoon salt
    • 1/2 teaspoon baking soda
    • 1/2 cup honey [affiliate link]
    • 2 whole eggs [affiliate link]
    • 1 Tablespoon vanilla [affiliate link] extract

    Preheat oven to 350°F. Gently whisk cocoa into the almond flour, then add the salt and baking soda, whisking again. In a different bowl, mix the wet ingredients together: honey, eggs and vanilla extract. Pour the wet into the dry and stir just until fully mixed. Butter an 8-inch cake pan (the kind with the little piece that goes around to help release the cake works best) and flour lightly with almond flour. Don’t forget to flour with almond flour as this cake will stick. Bake for 20-25 minutes. The texture of the cake will be brownie-like.

    Frosting:

    • 1/2 cup raw almond butter, at room temperature
    • 2 Tablespoons softened butter
    • 2 Tablespoons and 1 teaspoon honey
    • 1/4 cup cocoa powder
    • pinch salt
    • sliced almonds [affiliate link] as garnish, optional

    Mix the frosting ingredients together. Frost the cake when it has cooled for about fifteen minutes. Frosting it while warm helps the frosting spread easily. The frosting is just enough for a one-layer cake.

    Serves eight. This cake is very rich and decadent. Also tastes great frozen for twelve hours.

    Well Fed: Paleo Recipes for People Who Love to Eat by Melissa Joulwan from Clothes Make the Girl Value $15

    I first learned about Melissa Joulwan’s blog Clothes Make the Girl when one of my friends posted a link to her recipe for Pad Thai. I have never eaten Pad Thai, but it just looked delicious. I tweaked it just a bit and loved it so much I made it for dinner two nights in a row. I spent some time on Melissa’s blog and found she used to be in roller derby and wrote a book called Rollergirl: Totally True Tales from the Track. I admire women that engage in rough and tumble sports like roller derby although I can’t even stay upright on skates. LOL. I bought Rollergirl and found it fascinating. And I love Melissa’s cookbook. Lots of GAPS legal recipes. I have just gone through the entire book and of the 75 recipes, I found only 7 that are not GAPS legal. I also have drool on my chin, thank you very much. There are a lot of Chinese food recipes in here like Egg Foo Yong and Chinese BBQ Pork and the aforementioned Pad Thai also makes an appearance. The book is stunning.

    Lacto-Fermentation by Wardeh from GNOWFGLINS. Value $20

    Wardeh is one of the kindest bloggers I know. You can just feel that coming through in her posts and words. This eBook is a companion book to the online courses provided by Wardeh when you are a member, but here’s the good news. You do not need to be a member in order to get full benefit from this book. Wardeh says, “There’s something to be said for watching someone demonstrate a technique, and you’re always welcome to become a member of our online classes. But, the bottom line is: yes, you can use this book on its own.” This book contains information on how to ferment nearly everything with 23 lessons, a suggested schedule, information on cultures and supplies at a discount, and the what, why and how of each topic.
    Cooking with Coconut Oil
    Have you been looking for more ways to get coconut oil [affiliate link] into your diet? Jennifer shares 68 recipes in this eBook for adding coconut oil into the foods you eat. If you are doing GAPS, 30 of the 68 recipes are already GAPS legal as written. Several others are easily altered to be GAPS legal. So far I’ve tried the Baba Ganoush – I’ve never had this before. Jennifer’s rendition was so yummy I was eating it with a spoon!
    Indulge: 70 Grain-Free Recipes
    Okay, this eCookbook as written has 23 GAPS legal recipes (out of 70 total) due to a couple of illegal ingredients. I have been chatting with Carol by email and I am planning to do a review on her book and I can get into more details at that time about which recipes are easily converted. The most important thing is these desserts are already grain-free, so that is huge. The illegal ingredients are arrowroot powder, cream of tartar, coconut palm sugar and maple syrup. The maple syrup can be subbed for honey [affiliate link], and for some of the recipes it may be possible to simply omit the illegal ingredient. For example, Carol says the meringues would likely do well without the cream of tartar. The raspberry jam calls for arrowroot powder and I know for a fact it’s easy peasy to thicken jam by simply cooking a bit longer to reduce the liquids. Here is a photo – I’ve indicated of these which are GAPS legal with an asterisk (*) and which are easily adapted with the hash sign (#). These are gorgeous and look so delicious!

    Toadally Primal Smoothies

    This eBook has a ton of smoothies in it, although I did see that some have whey and protein powder there are dozens that do not. At any rate, if you are looking for ideas for smoothies, this is a huge collection (over 150). Every smoothie has a photo, and there is nutritional information on each one as well.
    Beyond Grain & Dairy
    Oh, of course I have to mention my own eCookbook, Beyond Grain & Dairy. Every recipe is GAPS legal, and there are color photos for every recipe. I really enjoyed putting this book together and I am really enjoying having my recipes printed out for easy access. I just printed mine on my laser printer (black and white), used the three hole punch and put the pages into a binder. If I get enough interest, I will consider a paperback version. So far my mom and my boss have requested a paper copy but we’ll probably just do the notebook deal for their copies. The other thing I wanted to point out is that if you have a Kindle, my book looks great on Kindle (even though it is not proper Kindle format). Just email the PDF to your Kindle (feel free to ask me if you don’t know how to do that).
