Got to bed around midnight last night. I was on the computer too long and didn't want to take more time taking a detox bath. I was awake by 6:30am and out of bed.
I made breakfast for me, hubby and ES. We had omelets with homemade pork sausage. For hubby I scrambled four eggs [affiliate link] in my Magic Bullet [affiliate link], then poured the eggs into a hot cast iron skillet that had plenty of melted butter (about one tablespoon). I typically cook at medium heat (we have an electric stove that goes from Low 2, 3, 4, 5, 6, 7, 8, High so medium is 5) but I am finding with this new way of cooking that 4 is better and sometimes 3. Otherwise I'm burning food. I let the eggs set up at 4 with a lid on top. Before I started the eggs, I sauteed fresh spinach. Hubby has been buying lots of avocados, they are on sale right now 3 for $1.00. So I mashed up two avocados and we had spinach and avocado omelets.
Since I only had six and a half hours sleep last night, I will probably be taking a nap soon. I need to get the nap done and over with, so I can concentrate on work that I need to get done today.
