    Romantic Weekend Getaway – Part Three

    Yesterday I shared Part Two of our romantic weekend getaway and the day before I shared Part One.

    We had such a lovely time on our getaway. It was much cooler in Prescott and the wind was blowing in the pines. There is also an amazing smell in the early morning which I remember from a time in my youth when I lived briefly in Flagstaff. It smells a little like ice cream to me, I’m not sure why.

    I’ll start with our breakfast on our last day in the cottage. For this meal, I wanted to eat out on the private patio. I wanted to use the hamburger I’d brought, so I made us each a hamburger patty and fried up the last of the 12 ounces of nitrate-free bacon. For hubby I fried three eggs [affiliate link]. We had more chicken stock with sauerkraut juice, and I made us each a fruit plate. We each had some honeydew melon, green grapes and for a sweet treat I made a little concoction that came to mind. I am going to call it a compote, although I’m sure that’s totally correct.

    I’d bought a container of blackberries from Costco a couple of days earlier, and I also brought two frozen bananas with me on our trip. I melted one tablespoon of butter in a skillet and mashed the blackberries and cooked them for a while in the skillet. After a few minutes, I dumped in the now melted bananas. The bananas had turned a bit dark having thawed in the refrigerator. I cooked them in the blackberries for about five minutes on each side. What a delicious little treat!

    After we ate breakfast it was time to start getting ready to leave. Checkout was at 11am and we started packing and getting everything into our vehicle about 9:30.

    On our way back, even though hubby had hoped he could get home, get his truck loaded and hit the ground running to the next job… we decided to stop at Lynx Lake. What a gorgeous body of water!

    We hiked down and I took off my sandals and dipped my feet into the water. Ahhhhh… it was a little chilly at first, but after a couple of minutes it felt great on my bare feet.

    After hubby climbed down from where he climbed up to take some pictures of me in the lake, we asked a couple passing by to take our picture which they happily agreed.

    It was such a nice weekend, and I think we both enjoyed ourselves and caught up on sleep! I got hubby to eat some good GAPS meals (even though he did drink Pepsi) and I think this was the nicest weekend we’ve had in quite some time. I am definitely getting more skilled at taking GAPS on the road! It really helps to have a full kitchen!

    Romantic Weekend Getaway – Part Two

    Yesterday I shared Part One of our romantic weekend getaway. I guess I didn’t get any photos of dinner our first night… in fact I can barely remember what we had. I think I made hubby some steak and fried eggs [affiliate link].

    At any rate, here is breakfast our first day there. I brought all the food with us. I brought 8 cups of frozen chicken stock. Here we each have a cup of chicken stock with sauerkraut juice in each cup. Breakfast was chicken salad. Hubby’s is on the left, mine is on the right. Each salad had chicken, homemade mayonnaise, lettuce, carrots, celery, nitrite-free bacon and olives. Hubby doesn’t like sweet tasting combinations, like grapes in his salad, so I gave him avocado instead. Besides I figured he can use the calories and fat.

    After breakfast I explored around the area and snapped a few photos. Here is the central area, it is pretty and green.

    I sat for awhile and tried to do some drawing, (I’m not an artist! I just thought it would be something different to try and it seemed like it would be relaxing) and after awhile headed back to the cottage. Around 11am I was feeling tired again, so told my husband I was going to take a nap, and invited him to join me. We fell asleep until 3pm! Both of us have been sleep deprived, especially my husband, so I was glad he took me up on the offer to get some more sleep.

    After we got up from our nap I made our next meal; we had burgers on lettuce buns with bacon and mushrooms, and our cups of broth and sauerkraut juice.

    Next we decided to go on a hike (or rather it would turn out to be more like a walk, which was perfectly my speed). First we got lost going through town and stopped and took some pictures of these pretty roses.

    And finally we got to the area where we had decided to hike. Hubby was disgruntled at having to pay a fee to spend a couple hours taking a hike. It was $5 per car, but we paid it and started on our hike into the forest.

    The hike was supposed to take an hour and a half total. We stopped long before we got to the top. When I started out, just walking the incline was wearing me out, but I kept going. I had to stop a couple of times and sit down and take a break. But not because I was out of breath! Just because my legs and calves were tired.

    After our walk we stopped by the grocery store and picked up a couple of things. I still had plenty of food, but I had forgotten to bring apple cider vinegar for our salad, and decided to use a lime instead of buying a bottle of pasteurized apple cider vinegar when I had raw at home. After I squeezed half the lime into the salad, I cut them and put them onto our glasses. All the plates and dishes were provided by the cottage, including the pretty wine glasses. We don’t drink, so we just had ice water.

    We had London broil steak with steamed cauliflower, a salad and chicken broth with sauerkraut. The salad was made with lettuce, hard boiled eggs, nitrate-free salami, onions [affiliate link], mushrooms, and black olives. It was delicious! For the dressing I used olive oil, crushed garlic, Celtic sea salt [affiliate link] and lime juice.

    We’d rented a Blockbuster movie from the grocery store; I’d brought my laptop and we started to watch the movie but it turned out to be a dud and we turned it off 30 minutes into watching it.

    Romantic Weekend Getaway – Part One

    My husband has been working really hard this whole year, trying to keep his business afloat. I’ve shared before my concern about his diet, and he was not getting enough sleep either, so I begged him to go away with me for the weekend.

    We are not the type to go on vacation. We both come from poor families, where a yearly vacation was something unheard of. I remember piling into my stepfather’s Chevy Vega (there were four of us older children, and an infant, if I remember correctly) and driving to California to visit his parents and disabled sister, Aunt Nancy. I don’t know about the rest of my siblings, but it was my first experience with a disabled person. That is the only vacation I remember, and eventually there were seven children. My husband has four children in his family, and he remembers going camping with his aunt and cousins.

    In our adult lives, we have not gone on many vacations. Since moving out here we owned goats, and it’s not easy to leave when you have to milk every single day. We did go to Washington, DC last summer and that was a nice little vacation.

    But it’s hard to relax here at home. I’ve tried camping out on our property (when we still owned the goats) but my husband manages to keep himself super busy around the yard. If he takes one day off, he’s still working all the time.

    So I thought the only way I could get him to relax (which in turn would lower my stress level!) would be to go away for the weekend.

    Thankfully our youngest son is still living at home and was willing to stay home with his older brother who has Down Syndrome.

    I searched online for someplace to go “up north” with the most important criteria: a full kitchen. It’s typically much cooler in the higher elevations of Arizona at this time of year, and one of my coworkers told me of a place she likes to stay in Prescott, so I started with that place. It turns out it was full and continued my search. All the regular hotels that have full kitchens were completely filled, and I just happened to find a little place with cottages that looked like it might fit the bill. I made our reservations and we planned to check in on Friday. Let’s say that I planned to check in at noon (check in time) but we were running late and then had to make a few pit stops on our way out of the city so we didn’t arrived until 8pm! I was feeling very disappointed as we were driving away from home about 3 o’clock. It was hard to not feel bad for the time we’d lost already, but I worked hard to try and just accept that we were running late and it would be okay. We had two more days after all.

    On the way to the cottages which were in Prescott, we had to drive through Prescott Valley and I caught this beautiful photo of some cattle grazing. They look like Black Angus.

    A little further down the highway we found these pretty white “flowers” and stopped to take pictures of them, they turned out to be some kind of stickery weed!

    Finally we arrived at our cottage, I was happy with it for the most part. This was the bedroom area. The bed was very comfortable. I brought my own pillow as I usually have trouble sleeping without my own.

    The kitchen was compact but it had a refrigerator, a gas stove and an oven! And it even had cast iron skillets! I was very happy to see those.

    At the far end of the room is a door which led out to the private patio area. The door was one of the half doors that could be closed on the bottom so the top could stay open to let in the cool air. These two photos show it closed first, then open:

    This is the hidden television. I thought for a minute there was no television! And I’m happy to report we didn’t turn it on even once!

  • You Know What I’m Really Tired Of?

    This is going to be a rant.

    It is hot in my house and my air conditioner has been running almost non-stop all day long. This does not contribute to my mood. It’s late at night, I should be in bed but I’m feeling very annoyed.

    Someone on our GAPS list posted that she had a large amount of strawberries to process and another person posted about the Strawberry Cream Pie from Tropical Traditions. In the post I just posted, I said I wanted to try this at Thanksgiving. But the reality is, I want it now.

    Why can’t I have dessert type foods? Why do I have to stick with only savory foods?

    I guess the reason why is solely because I want to lose more weight.

    I don’t want to stay at 180 pounds. I have been wearing my pretty dresses to work because I don’t like the discomfort of wearing my jeans and I don’t want to buy bigger pants! I would rather lose the two or three pounds and be able to wear the pants without having them feel so tight. So when I went to spend time with my friend I couldn’t wear my dress that I’d worn to work because I would be overdressed. So naturally I brought a pair of jeans and it was just awful how uncomfortable they were.

    It just doesn’t feel fair that I’ve given up so much… grains and flour and sugar and chocolate candy bars and soda and high carb vegetables and fruit and honey [affiliate link] and peanuts, and still I have to do more. Like eat less. A lot less.

    Agh. I am just not happy right now. I need to floss my teeth, take a cold shower and go to bed.

  • Beet Salad

    Beet Salad

    One of my old favorites was Potato Salad, and I’ve found that cauliflower makes a great substitute for the potatoes. Hubby brought me home ten beets the other night! Several of them were quite large, about the size of a navel orange. I washed and steamed them all and we ended up with lots of leftovers.

    I decided tonight I would make a salad similar to potato salad, only I would use beets.

    • 2 cups steamed beets, peeled and diced
    • 1/2 cup onion, diced
    • 1/2 cup celery, sliced thin
    • 1/2 cup cucumber, diced
    • 18 black olives, sliced
    • 1/2 cup homemade mayonnaise
    • 1/2 teaspoon sea salt [affiliate link]

    Add all the ingredients together and mix.

    I thought this was a good combination of ingredients, and tasted similar to potato salad. Although the beets have a juicier flavor that starchy potatoes.

    Today was a better day for me food-wise. I did not end up overeating until my stomach was too full.

    I did an experiment and kept track of the foods I ate… I had intended to count my calories, just for one day, even though Dr. Natasha says we shouldn’t… but I never did count the calories. I thought I would just keep track of what I ate, and count the calories later? But then I made the beet salad, and although I kept track of the ingredients, I did not measure out the entire dish, then measure out a portion for myself, and then calculate the calories. Agh. I hate counting calories.

    Anyway, I am also in a dilemma with my fermented foods as I am feeling conflicted by what I’m reading at the Pickl-It site. They are saying we need to be fermenting our cabbage for a minimum of 8 weeks, and ideally twelve! That puts a real damper on my ability to have sauerkraut when I’m almost out and have to wait two or three months for more!

    So here is what I ate today:

    Breakfast

    1 medium sized eggplant, peeled and diced and sauteed in 1 tablespoon beef fat from yesterday’s roast made in the crockpot

    1 Tablespoon coconut cream [affiliate link] concentrate

    2 Tablespoons butter

    Lunch

    2 eggs [affiliate link], scrambled

    1 Tablespoon butter

    2 green chilies

    Snack

    1 pickle (not GAPS legal)

    1 cup spinach cooked

    1 teaspoon butter

    8 black olives

    Dinner

    1 cup spinach cooked

    1 teaspoon butter

    2 pork chops

    No ferments! Shame on this GAPSter! I will go and drink some beet kvass to make up for it.

    Tomorrow I am going to try and get more protein earlier in the day.

    Yesterday after work I went to one of my friend’s house to spend some time with her. We try to get together around our birthdays and mine was in May, so it was time to get together again. We went to Bil Johnson’s Big Apple for dinner and I paid for the meal. For dinner I had the Serious Top Sirloin Salad and an à la carte serving on the side of salmon. I brought in my own olive oil since they don’t have any in the entire restaurant and I can’t use any of their dressings. My friend works at AMC Theatres and she “provides” the movie. We saw Super 8, it was a pretty decent movie.

  • Dance the Night Away

    Yesterday I went to a wedding for a dear friend with whom I used to work. It’s always a challenge going to celebrations because of the food dilemma, but I’ve been doing GAPS 18 months now and I no longer feel deprived if I can’t eat what everyone else is eating. My friend had her dinner and reception at a Mexican food restaurant. Thank you God that I’ve been doing GAPS so long, because Mexican is one of my favorite foods. The meal consisted of refried beans, Spanish rice, flour tortillas, corn chips, salsa and some kind of beef. I passed on everything – I could have taken a chance on the salsa and the beef, but I didn’t want to take a chance on getting any illegals.

    I’d gone to a grocery store just prior to the dinner and bought myself some nitrate-free salami, an avocado, a banana, and a package of deli meat with no nitrates. I also brought from home some “fudge babies” made with almond flour [affiliate link], cocoa powder [affiliate link], butter, coconut flakes [affiliate link], chunky peanut butter [affiliate link] and a dab of honey [affiliate link]. The banana and the fudge babies were my substitute for wedding cake! 🙂

    Anyway… all of my life I have been too shy to get up and dance. Not to mention I was raised in the Pentecostal religion and dancing was forbidden (unless of course you were under the supposed power of the Holy Spirit). With the idea dancing is forbidden, along with the overbearing thoughts of how stupid I must look, how people surely are laughing at me while they watch me consumed me and I could not get past the thoughts. Actually, I was able to dance one time, when I went out with my sister. But it was difficult as the thoughts were nearly overwhelming.

    But since my personality change, which I have to attribute to GAPS and healing gut dysbiosis, I was able to get up and dance several times and I enjoyed myself immensely. Can you see the joy in my face in the photo above? I danced with the bride and I danced with some women friends in attendance, and I was able to completely turn off the feelings of self-doubt and feelings of embarrassment.

    I felt joyously alive. I felt happy. I had energy! I felt like dancing! And I got up and danced when a song came on that I enjoyed! The bride and groom had a DJ and there was a great mix of songs, from Latino to disco to slow dance love songs.

    I have been quiet here at the blog because I have been tired lately and I have been going through a bit of a rough patch. It’s hard to find the energy to put my words here when I am tired.

    People don’t understand what GAPS can do. They see the weight I’ve lost, and they automatically assume it’s a diet to lose weight. While I have lost weight, that has only been one small side effect of doing GAPS. My main goal has always been to regain health; to stop feeling exhausted and feel joy instead of depression. I have had much healing in the last 18 months, and I am no longer super tired or badly depressed, but my body is still healing. I still need plenty of sleep and don’t have a lot of energy yet. I’m still at times bummed out, but nowhere near as bad as I felt before GAS.

    It takes time to heal the gut; Dr. Natasha says two years, “…if we’re lucky.”  One of my list members said it can take one month for every year one has been alive, so it may well take four years for me to heal (since I just turned 48 last month).

    I am still working to heal my body, and I know it will take time, and I’m willing to do what it takes to continue to heal.

    Last night in between dancing the night away… I thought again of who I might have been had it not been for gut dysbiosis… I am such a strong woman, how much more would I have done if I’d actually had some energy?! I have always been tired and lethargic. As a child I detested running and physical education. It seems I was born with fatigued adrenals. Speaking of which, I did get back the results to my adrenal testing. I hope to share what I learned soon. I have not yet decided on the course of action I want to take, and how much of the prescribed protocol I want to follow.

    It is a little stressful because there is a part of me that wants to be the “good girl” and do what I’m told, on the other hand, Dr. Natasha says we should be in charge of our own health. Additionally, the protocol includes GAPS illegals, so I would be disregarding the Dr. Natasha’s protocol if I started on GAPS illegal supplements. Not to mention I might make myself sick!

    So I am still trying to decide what I want to do as far as following through with the suggested protocol to heal my adrenals.

    Last night was fun. The reception was scheduled to last until midnight, but I said my goodbyes around 10pm as I was starting to feel sleepy, and had an hour’s drive home. I got home and was in bed by midnight. A late night for me, but wow! I actually had the energy to participate and enjoy myself.
