Coconut Banana Smoothie

I have been wanting to make the Whipped Banana from GAPSters, but I don't have that homogenizer thing they use on their juicer.

And my son, on the way home from work on late afternoon decided to stop by Dairy Queen to get my favorite Blizzard – the Turtle Pecan Cluster. He asked me if it would be too tempting if he got that one, and I told him I would be okay.

I was okay! It really helps if you know you can make something similar. I am not having chocolate, but I could have something cold and smooth and dreamy with walnuts [affiliate link], I told myself.

When I got home I froze the last banana. It was perfectly ripe, with brown spots. I mushed it up and froze it flattened so it would be easier to break up when I put it into my Magic Bullet.

I really need to start measuring, but smoothies are really for me at least, about throwing some stuff in and mixing it up and it always tastes delicious.

Banana Dream Smoothie

  • one frozen banana
  • one egg yolk, optional
  • coconut milk [affiliate link]
  • pinch of cinnamon [affiliate link]

Carefully slice frozen banana into small chunks. Add egg yolk and coconut milk. Blend.

Garnish with cinnamon.

Serves 1

Ohhhhh… it was sooooo dreamy and creamy and delicious! I am not really eating a lot of fruit right now, but I think I'll buy bananas when they are on sale and freeze them individually to use for this smoothie when I want a cold dessert.

  • one frozen banana

    Where do you buy your coconut milk? or how do you make it? I have not found a Gaps legal coconut can. Thanks.

  2. Hi Jonathan – thank you for your question. My response was delayed because I had written to the distributor to make certain the product I was using – Natural Brand Coconut Milk did not contain guar gum. I have not heard back from them. The ingredient list for the regular NON-organic coconut milk contains only water and coconut pulp.

    Oddly enough, just yesterday at Amazon.com the NON-organic was $22.88 for 12 – 14 ounce cans, but today the price has shot up to $49.99 plus $8.99 shipping! Bummer! I was seriously thinking of ordering a case of the non-organic before the price skyrocketed.

    The “organic” coconut milk’s ingredient list states that it contains guar gum.

    The Organic Coconut Milk by Natural Value which contains guar gum is only $19.51 for 12 – 14 ounce cans.

    The Natural Value website has a list of items they distribute. Once you get to the site click on the Coconut Milk on the right and a PDF will open which states there is no stabilizer or preservatives in the NON-organic coconut milk.

  4. @lissi*star, I will check out that site, I have four coconuts and need to make them into coconut milk so I can try making cocoyo (coconut yogurt). Thanks for the recommendation.

  5. Oh yum. So simple and sounds delicious. All I need is a banana! Thanks for the pre-mashing tip, which I am definitely going to try. I usually chunk them, but this sounds better.
