  • Day 176 – First Time Eating Out in Six Months

    Well, yesterday marks the first time I’ve eaten out in a restaurant since beginning GAPS on December 6th.

    I turned 47 this past week. In the past I had signed up for various “birthday clubs” so I could get a free meal or ice cream cone or something free. But since starting GAPS and cleaning up my diet, I had to pass on most of the offers that arrived.

    I decided that I wanted to try eating at Black Angus. If I were eating organic, this would not have been possible, but we are not there yet so I felt it was a good option. What could go wrong with a hunk of meat and steamed vegetables, right? I was actually pleased with the experience. My hubby and I went together to the same Black Angus we went to for my birthday last year.

    I was a little nervous going in to the restaurant, not sure if I wanted to disclose to our waiter/waitress that we are on a special diet, eating gluten-free, casein-free, or how to explain it. I decided to just wing it.

    We were seated, and our waitress arrived within minutes, bearing fresh baked molasses bread and margarine. I knew the bread was coming. I’d hoped I could reroute it before it actually arrived, but she caught me by surprise. I didn’t want the bread there tempting me, and I didn’t want to waste the bread either, so as she leaned in to set it on our table I waved my hands under the plate and said, “We’d like to decline the bread, please.” She was a slightly taken aback, but recovered immediately, setting the bread at an empty table. I apologized and told her we wouldn’t have eaten it, so I didn’t want it to go to waste.

    I guess I could have told the hostess to let the waitress know we don’t want the bread, but hey, it’s my first time at a restaurant since starting GAPS, so I’m new to this.

    She asked if we would like something to drink. My husband got a plain iced tea and he always declines the lemon slice they like to stick on the rim of the glass due to reports of unhealthy bacteria lurking on the lemon slices. I decided to “cheat” and have a bottle of Perrier sparkling water.

    I’d already downloaded the menu at home and on our way to the restaurant we perused the entrees and determined what we might choose. It’s so much easier researching the menu ahead of time, because you can examine all the little details.

    Hubby did really good, although I think he might have been a little embarrassed at all the things we “declined” or asked them to leave off.

    It was a little bit uncomfortable, but not too bad. I guess what was uncomfortable is that I am not used to asking so many questions and declining so much. I have always asked for my salad dressing to arrive on the side, so that never seemed too odd over the years, but I felt like I was being a little bit nitpicky. The waitress was very accommodating, and never made me feel like I was being a bother, it was just my own discomfort in needing to ask  for something special.

    Okay, so we ordered our meal.

    I wanted something special, and I rarely get appetizers, and the only thing I saw that would be legal was the Fire Grilled Fresh Artichoke. It came served with Tangy Lemon Aioli and Basil Pesto Mayo for dipping. I asked her if she knew how the artichoke was prepared, she said it was cut in half and grilled, and they added some seasonings to it. I asked her if she knew what the seasonings were and that I was trying to avoid MSG. She said it might have MSG because they use a lot of MSG. Uh-oh. I guess if you are very sensitive to MSG you would have to be really careful at Black Angus.

    I asked if she could find out if the artichoke could be grilled sans the seasonings and I asked if they had butter – she asked me if I meant “real butter”. It was as if she thinks margarine is butter, too. You know it’s like if I’d asked for margarine, she wouldn’t have said, “You mean fake butter?” 😉

    She came back a few minutes later to let me know that the artichokes are marinated in the seasonings, so it was likely to have MSG soaked into it. I decided to forego the artichoke. Hubby was pleased as it cost $8.99.

    Hubby ordered the 11 ounce Top Sirloin Center Cut which cost $18.99. You get two “sidekicks” so he ordered a garden salad with no dressing, and steamed broccoli. The steamed broccoli came with parmesan sprinkled on top, so I asked our waitress to leave that off (since he is the one that can’t have any dairy).

    I ordered the 1/2 pound cut of Prime Rib which cost $18.99, and I also had garden salad and broccoli sans the parmesan.

    I brought olive oil mixed with raw apple cider vinegar from home for our dressing.

    I forgot to ask what came with the garden salad, and both arrived with croutons sprinkled on top. We picked those off. Hubby just put his to the side. He cracks me up, I told him it reminded me of when I was a child, picking things out of my plate and hiding them in the napkin so he told me he used to stick the food he didn’t want up his nose. Yes, that’s my husband.

    The salad consisted of iceberg and loose leaf lettuces, shredded carrots, shredded red cabbage, and one tiny slice of tomato.

    Very soon after we finished eating our salads, our meal arrived, delivered by someone other than our waitress.

    My husband was aghast at the small piece of meat on his plate. He was practically in shock as he was sure he’d ordered a 20 ounce steak and envisioned a huge steak arriving with a bone in it so he could take it home to our dog, LJ.

    It was about the size of a hamburger, about two inches tall. He looked at me, and soon our waitress arrived and he asked her “Is this what I ordered?” and she looked at her notepad and repeated what he had told her. I did remember hearing him say 11 ounce and thinking that was sure a small amount of meat. I just assumed he was trying to keep the costs down.

    My prime rib arrived at the same time, with au jus. Maybe it’s just me, but I think I can taste MSG in foods. Is it just me? I am sure the au jus had MSG in it. I did dip a piece of my meat into it one time. It actually hadn’t occurred to me that it most likely had MSG in it. I mean, once I tasted it, of course, it was like DUH. Of course they didn’t make real beef broth. I’m not overly sensitive to MSG (my husband gets headaches if he ingests it) but I have been avoiding it for over a decade, so I wasn’t too freaked out over getting some MSG. My broccoli seemed to have some bits of something on it, maybe garlic?

    Our waitress asked me if I wanted the butter melted or solid? I asked to have it melted, so that arrived about two minutes after our entrees.

    My prime rib was much smaller than I’d anticipated, and was about one-third fat. I am doing better at eating some fat, but not that much. It was very flavorful, and especially delicious dipped in butter. I poured butter over my broccoli and that was delicious also.

    Of course our waitress offered dessert, and we declined. On the way out of the restaurant, I noticed an elderly couple sharing a piece of Big Mountain Chocolate Fudge Cake. They were both frail looking, with white hair. The piece of cake was in the middle of the table and they both had cups of coffee [affiliate link].

    I wondered if they eat SAD all the time, and I wondered if my husband and I will look so frail and pale when we reach our golden years.

    And I also thought of how I can make chocolate cake with almond flour [affiliate link], cocoa and honey [affiliate link], which is smashingly delicious, if you can tolerate cocoa powder [affiliate link] (cocoa powder is not GAPS legal).

  • Day 171 – Nearing Six Months on GAPS

    Wow. I can’t believe it’s been almost six months. It’s definitely getting easier.

    There was some conversation on the list about how we’re the weirdos because we’re not eating “normal” food. Is that twisted? Fast food, junk food, fake food, chemicals, additives, food colorings, indigestible fiber, that’s all considered normal. But eating traditional real food makes us the odd ones.

    Anyway, today was my last day off work. My husband and I went into town and I decided to try on a pair of pants since my regular pair are getting so loose on me. I bought a new belt last Thursday, 38″ was the length, so I thought the jeans might fit me as they were also 38″. They were regular fit Lee jeans. In the past, I’ve had to wear the stretch version.

    They fit.

    I also decided to buy a few new tops, and I got so lucky! A bunch of women were huddling around two racks of clothing, and I just knew something was up. They were all marked down to one dollar!! So I got three sleeveless shirts, all fuchsia, mostly for wearing at home. A couple of other shirts and a jumper style dress.

    It is really nice to not have to look for a 2X. You know, I’m no big clothes person, but I feel it is true the larger I’ve gotten, the less selection. And also the clothes just aren’t very pretty. I’ve also noticed it is difficult to find clothing that fits at the second hand stores. I never had a problem when I was smaller. There were many items to choose from at smaller sizes.

    Anyway, the tops I got were all 1X or 16-18.

    Also, while we were in town, we happened upon a Farmer’s Market. I was able to chat with a lady who is close to the area. I dearly wish I was retired, for I would love to have been able to ask her if I could volunteer to help her in her garden. She has about ten acres, but she is also being ravaged by all the hungry desert critters. We had a nice talk about how terrible they are, how they eat everything right down to the nub, or they chew through the arms of the butternut squash!

    There was a guy there that sells a couple of beef a year, and he doesn’t do hormones, antibiotics, etc., but he does feed grain. Hubby pointed out the liver which was marked one dollar, so I snatched it up. I figure it’s got to be better than the regular store liver.

    For the vegetables, I bought a bag of spinach which was $3, a thick red bell pepper for $1.50, 3 large beets with greens for $1.50. I was tempted to buy the zucchini squash but passed on it.

    I took a nap today, so that’s why I’m up late. I better get going as 3:30 gets here very early.

  • Review: Vegan Vanilla Ice Cream

    I decided I wanted to try this ice cream as a treat for my birthday. I can’t have my old favorites so I wanted something special. I decided to try Elana’s Pantry’s Gluten Free and Vegan Vanilla Ice Cream.

    I followed the recipe, except I used honey [affiliate link] instead of agave since honey is legal on GAPS and agave is not.

    I do not have a Vitamix* like Elana has, so to compensate I added all the ingredients and only 1/2 cup of water at first. I allowed the mixture to blend for about a minute, then added the remaining 1 1/2 cups of water. I have an Oster Professional Series blender. My model is BPHT02 and is equipped with a 600 watt, half horsepower motor. I got it from Costco and I have been very pleased with it. It looks like my particular model is out of production, and this one looks like a close match Oster BPCT02-BA0-000 6-Cup Glass Jar 2-Speed Toggle Beehive Blender, Stainless Steel:

    I really love the ease of using myDonvier 1-Quart Ice Cream Maker*. Years ago, my sister came up with the brilliant idea of keeping the freezer insert in her freezer so she could make ice cream on the fly. I have done the same and can make ice cream on a whim.

    I was thrilled with this ice cream substitute, so thrilled in fact that I ate almost the entire two cups all by myself. Sigh. Well, all the ingredients were GAPS legal! There are around 500 calories in one cup of cashews, so that is a lot of extra calories for me in one day.

    I will make this again, but I think the next time I will try soaking the cashews overnight as the ice cream was just a bit grainy. Just the tiniest bit. Still it was delicious and a very satisfying and delicious special treat. If you are looking to get more calories, and can eat cashews and have honey, this would be a great way to meet that need. I have entered the recipe into my account at Calorie Count, and this ice cream is 180 calories per 1/2 cup serving.

  • Day 169 – Ten Cabbages Down, Five to Go

    I’ve been checking out Comfy Belly and ran across these Coconut Flour Donuts and wow, do they ever look good! Alas, they contain baking soda [affiliate link], so they are not 100% GAPS legal. And these Cinnamon Cookies.

    I’m up late tonight, it’s 10:33. I was really having a craving tonight for a “treat”. I have been eating and eating tonight. All legal and no fruit, no honey [affiliate link] or nuts. Vegetables and meat and butter.

    Yesterday I attended a baby shower and the only “legal” foods that I could eat was the raw carrots and raw jelly bean tomatoes. I declined on everything else. The hostess made some kind of monkeybread thing that she baked fresh, but it was made with cheap store brand biscuits. No matter. Six months ago I would gladly have eaten a plateful. But I did real good, only ate the carrots and tomatoes.

    It wasn’t as difficult as it was two months ago, at the last baby shower. Nor at the wedding, where I was on Intro and couldn’t even have raw vegetables.

    Maybe tonight’s bottomless pit was due to not being able to join in eating all that crap yesterday. But at least I ate healthy foods tonight.

    On the cabbage front, I used up five more cabbages. Let’s see… I made cabbage rejuvelac and a batch of regular sauerkraut using three. I froze two more. The Stuffed Cabbage turned out pretty good, I will probably make it again.

    And the remaining five still sit out of the fridge as I type.

    Today I worked in my garden with my husband. I have had an intruder in the garden, eating my squash plants. One was eaten down to a nub. I did some makeshift patching to the possible entries into the garden, but within a couple of days the intruder was in the garden again, this time eating the growing tip from my butternut squash and fourteen leaves from another squash plant. Not good for my squash production.

    So my hubby and I got out there, he rebuilt my garden “gate” which is more like a screen door with chicken wire. He originally built it using wood and it was all tweaked and bent sideways, so the intruder may have entered that way. This time he built me one from sheet metal (and chicken wire) so it shouldn’t be affected by the weather. I am so blessed to have such a handy husband.

    There were weeds in the garden again, I got most of them out and also did a deep watering on all the beds. I told the squash plants I expect to see female flowers tomorrow, no more excuses! I have been seeing all male flowers, I should have told them females AND males, watch tomorrow I’ll probably have only female flowers, and no males.

    Lots of tomatoes. I have been flicking the flowers, hoping to help along the pollination. The temperature dropped to around 70°F this evening, weird for us at this time of the year.

    I worked in the garden about 2.5 hours, then came in and took a two hour nap. It was nice to take a nap and relax. I am off work for a couple more days.

    Today I also bagged up my almond flour [affiliate link] (25 pounds) into smaller gallon freezer ziploc bags and got it into the freezer for storage.

    I had better get myself to bed.

  • Day 167 – Five Cabbages Down, Ten To Go

    In case you don’t remember, I ordered a case of cabbage from Azure Standard, and the first night I cooked one head of cabbage and ate it. Today I used two heads to make Cortido (Latin American sauerkraut), I froze one head in preparation to make Stuffed Cabbage (please note the linked recipe is not the one I used but I wanted to include it as my inspiration to try making Stuffed Cabbage) and tonight I made a goulash-type dish with hamburger and another head of cabbage.

    I am planning to make cabbage rejuvelac tomorrow, as well as another batch of regular sauerkraut.

    Then I’ll still have seven heads of cabbage to use! At least I should be able to find room for that many in the fridge as the poor things have all been sitting out. They still look just fine, but I know they are losing quality by sitting in a room that is 79°F.

    I did not have any fruit yesterday, or today. I had a twinge of wanting something sweet after lunch today, but I nixed the thought immediately and did not indulge my desire.

    My birthday is next week, and thankfully I never signed up for too many of those “free birthday offers”. I did have a coupon arrive for Denny’s, one for Black Angus and a third from Baskin-Robbins.

    I am thinking about using the Black Angus one, I think I can order prime rib. Maybe I can bring olive oil and apple cider vinegar and order a plain salad. And maybe I can ask if they could steam me some fresh vegetables. I’m encouraged by an article over at Donna Gates Body Ecology site that one of the list members posted: How to Eat Out at a Restaurant; Six Tips to Eat Healthy, Choose Wisely and STILL Enjoy Yourself When Dining Out.

    I had thought it might be possible to just get a steak and a salad. We’ll see how it works out, if I even go through with it.

    Since my birthday is coming, I want to make an almond flour [affiliate link] treat, and also I want to try this Vegan Vanilla Ice Cream made with raw cashews! I know, I know, all those “extra” calories that I probably don’t need.

    Well, I guess I had better get to bed. Nighty!

  • Day 165 – First Azure Order Arrives

    My first order with Azure arrived today.

    I ordered a case of cabbage. I have no idea why, but I thought I was buying SIX HEADS of cabbage. I knew it was a case. I looked at Azure and can see no reason for making the mistake of thinking I was getting six heads. I knew the case was going to weigh FORTY pounds. Did I really think each head would weigh 6 1/2 pounds?

    Well, there were 23 small heads in the case. I donated 8 of them to the coop manager, since she said there were several more people coming to get their order who were into Nourishing Traditions so they would probably be able to use the cabbage.

    I had planned to make cabbage rejuvelac, a batch of sauerkraut and Latin American sauerkraut.

    When I got home, I cooked one of the smaller heads and ate the whole thing all by myself.

    I also cracked open my fermented cod liver oil and took a half teaspoon. I’ve been taking Vitamin C 4000mg at a time (twice today already) and also echinachea tablets. My husband has a really bad cold and I drank water after him today so I am hoping to avoid getting what he has by taking the three items above.

    I’m also not going to eat any fruit at all. When I have been exposed to a sickness and possibly ingested germs straight from the host, I find great resolve to avoid foods which I feel dampen the immune system. When I was having sugar, I would find great strength and be able to avoid it easily, because I knew it would only make my body weak in fighting against the sickness.

    Also, fruit seems to be affecting me negatively. Not only do I suspect it is keeping me from losing weight, but it seems to be affecting my energy level.

    Let me try to explain this.

    1. I haven’t really been able to eat fruit in the past few years because it affected my blood sugar almost immediately. It was uncomfortable to feel that nervous and shaky feeling, so I avoided fruit.
    2. A couple months into GAPS, I realized, happily, that I can now eat fruit without my blood sugar being affected.
    3. In the year previous to finding and embarking on GAPS, I had begun to avoid simple carbohydrates (pasta, mac and cheese) because I had started to notice that I would feel overly tired the following day. My husband also noticed that the day after a high carb meal, he would feel sluggish the next day. So we had already started to avoid having “junky” meals.
    4. Now that I can eat fruit without a blood sugar drop, it seems that I am having that day after tiredness that I used to have with carbs.

    It was a nice relaxing day today. My husband spent time in bed, something he rarely allows himself to do, and also a testimony to just how crappy he is feeling. I also was lazy and laid around in bed cat napping when I could. We had to go into town for my appointment, heading out at 10am and after the appointment we drove closer to some mountains and I didn’t knit while we drove or anything. I usually try to multi-task when my husband drives. But today I just relaxed. Then we picked up the coop order and stopped at the store to buy a few things.

    I found a soup recipe in a magazine at the doctor’s office! It had only two GAPS illegal ingredients (heh, potatoes and bread) but I think it will be great even without those. I will report back once I try it.

    I came home and made myself the head of cabbage (sauteed in coconut oil [affiliate link] and water, then put some butter and Celtic sea salt [affiliate link] on it, yum, yes I know I’m still having butter, too), and then I was just so tired I laid down at 3pm and fell asleep until 5:30. I have to work tomorrow and have to get up at 3:30am! I hope I will feel tired enough to go to sleep soon. Maybe I will take a detox bath tonight, even though I do not find that appealing as it is already hot here in Arizona.

    I guess that’s it for today.
