Recipe: Pumpkin Pie Carrots

- 1 pound frozen carrots
- 2 tablespoons virgin coconut oil
- ¼ teaspoon grated fresh ginger
- pinch of cinnamon
- 2 teaspoons honey
- light sprinkle sea salt
- ghee, optional
- Melt the coconut oil in a heavy cast iron skillet, rinse the carrots in warm water, drain and add to the coconut oil.
- Heat at medium-low heat for 5-8 minutes until carrots are heated.
- Lower the heat just a bit.
- Grate fresh ginger on a Microplane Grater and add to the carrots.
- Stir well.
- Add a pinch of cinnamon, 2 teaspoons honey, light sprinkle of sea salt.
- Taste and add more cinnamon or honey to your liking.
- Serve warm.
