I love pumpkin [affiliate link] treats any time of the year. One really neat thing to remember is that you don't specifically need pumpkin… you can use any kind of orange winter squash, like butternut or acorn, and you can also use carrots, in place of the pumpkin. These are just tiny little bites and you can enjoy several of them and there's no need to feel guilty at all!
Pumpkin Cookie Kisses
- 1/2 cup cooked pumpkin
- 1 egg
- 1/4 cup honey
- 1/2 teaspoon sea salt [affiliate link]
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/8 teaspoon cloves
- 1/8 teaspoon ginger
- 1/8 teaspoon nutmeg (preferably freshly grated)
- 1 + 2/3 cups almond flour, packed
- Preheat oven to 350°F.
- Process pumpkin, egg and honey [affiliate link] until smooth using a blender.
- Place in a bowl, add sea salt, vanilla [affiliate link] extract and spices.
- Mix well.
- Sift almond flour [affiliate link] after packing to avoid lumps, mix ingredients together.
- Place on a cookie sheet by heaping teaspoons, or pipe using an icing bag and open star tip.
- Bake 4 minutes or until bottom is lightly browned.
