I wanted something a little sweet. So here's what I came up with. I don't know that it's full GAPS, I guess I had better figure this out so I can tag it appropriately. Oh yay. I just looked at the recommended foods at The Gaps Diet and all the items are approved for full GAPS.

Blended in my Magic Bullet Blender until it was smooth.
Pretty delicious, even without any added sweeteners.

Your recipe looks wonderful! Where do you get “natural” coconut? Do you make it? How?
Thanks so much!
Betty, I was using Natural Value coconut milk, which previously was “safe” and “legal” since it did not contain any additives or stabilizers. Here is the information from the guy who produces and sells the product.
Here’s the latest from Gary at his blog – he says three months until the “natural” coconut is back on the shelves. He says consumers need to ask for the product where they shop:

In case you missed the other part of the story, Natural Value coconut milk (the NOT organic version) had no guar gum or additives, but then suddenly it showed up with the additives. Here is his first blog post, addressing the situation:

He says it should be back on the shelves in about 90 days, so ask your grocer to get it in stock. It’s Natural Value coconut milk – it is NOT organic, and it has no stabilizers or additives. Good luck!
